Seared Scallops

Ingredients
- 8 raw sea scallops
- 2 Tablespoons Clarified Butter
- Pinch of Salt
- Freshly Ground Black Pepper
- 2 Tablespoons Unsalted Butter
- 1 tablespoon thyme leaves, minced
- 2 tablespoons freshly squeezed lemon juice
Directions
- On a clean surface or countertop, dry the raw scallops by patting with a paper towel to remove any excess moisture.
- Season both sides with salt and pepper.
- Place a medium skillet over the stovetop and turn burner to medium-high heat.
- Add 2 tablespoons of clarified butter to the skillet.
- Once the clarified butter has melted, add scallops to the pan evenly spread out from each other.
- Cook for three minutes, or until bottom of scallops are golden brown. Turn over the scallops to cook the other side.
- After two minutes, add 2 tablespoons of unsalted butter and thyme to the center of the skillet.
- Once the butter has melted and begun to brown, use a spoon to scoop butter and bathe the cooking scallops.
- Continue to bathe scallops in butter until the second side of scallops has turned golden brown and the surface of scallop offers mild resistance to touch.
- Add lemon juice to browning butter in skillet.
- Once scallops are finished cooking, turn off the stove and remove from heat.
