  Ingredients

  • 8 raw sea scallops
  • 2 Tablespoons Clarified Butter
  • Pinch of Salt
  • Freshly Ground Black Pepper
  • 2 Tablespoons Unsalted Butter
  • 1 tablespoon thyme leaves, minced
  • 2 tablespoons freshly squeezed lemon juice

Directions

  1. On a clean surface or countertop, dry the raw scallops by patting with a paper towel to remove any excess moisture.
  2. Season both sides with salt and pepper.
  3. Place a medium skillet over the stovetop and turn burner to medium-high heat.
  4. Add 2 tablespoons of clarified butter to the skillet.
  5. Once the clarified butter has melted, add scallops to the pan evenly spread out from each other.
  6. Cook for three minutes, or until bottom of scallops are golden brown. Turn over the scallops to cook the other side.
  7. After two minutes, add 2 tablespoons of unsalted butter and thyme to the center of the skillet.
  8. Once the butter has melted and begun to brown, use a spoon to scoop butter and bathe the cooking scallops.
  9. Continue to bathe scallops in butter until the second side of scallops has turned golden brown and the surface of scallop offers mild resistance to touch.
  10. Add lemon juice to browning butter in skillet.
  11. Once scallops are finished cooking, turn off the stove and remove from heat.
