Tofu Broccoli Stir-fry

Ingredients:

  • 2 cups parboiled rice
  • 1/4 cup reduced-sodium soy sauce
  • 1 Tbsp smooth peanut butter
  • 2 Tbsp brown sugar
  • 1 tsp cornstarch
  • 1/2 tsp red pepper flakes
  • 1/4 tsp garlic powder
  • 1 Tbsp canola oil
  • 12 oz extra firm tofu, cubed or crumbled
  • 4 cups broccoli florets

Directions

  1. Cook rice according to package directions. Remove from heat and set aside.
  2. Mix together the soy sauce, peanut butter, brown sugar, cornstarch (added to a little bit of cold water to start), red pepper flakes, and garlic powder in a small bowl until well blended. Set aside.
  3. Add oil to large frying pan and heat for about 30 seconds. Add the cubed/crumbled tofu and broccoli over medium heat and cook for about 4 to 5 minutes, until tofu is golden and broccoli is tender.
  4. Add soy sauce mixture to frying pan and stir to combine. Cook for approximately 2 minutes, stirring constantly until sauce has thickened.
  5. Remove from heat and spoon tofu and broccoli mixture over rice. Serve immediately.
