Pumpkin Spice Muffin Recipe
Number of Servings: 18 muffins

Ingredients:
● 3 cups all-purpose flour
● 1 teaspoon salt
● 1 teaspoon baking soda
● 2 teaspoon baking powder
● 2 teaspoon cinnamon
● 1 teaspoon pumpkin pie spice
● 2 cups granulated sugar
● 2 cups solid pack pumpkin
● 1 cup canola oil
● 3 large eggs
● 2 teaspoons vanilla extract

PREPARATION
1. Preheat oven to 375° F.
2. Paper-line or grease 18 regular sized muffin cups.

DRY INGREDIENTS
1. Combine flour, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice in a large bowl.

WET INGREDIENTS
1. Combine sugar, pumpkin, oil, eggs and vanilla extract in a separate large bowl.
2. Beat until just blended.

MIXING
1. Add wet ingredients to the dry ingredients.
2. Stir until just moistened.
3. Spoon batter into prepared muffin cups, filling ¾ full.

BAKING
1. Bake in oven for 13 to 15 minutes until golden brown and it springs back upon touch.
2. Cool in pans on wire racks for 10 minutes.
3. Remove wire racks to cool completely.
4. Store muffins in covered container at room temperature for up to three days.
