Pancakes from Scratch

Ingredients for the pancakes:
- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 1 teaspoon salt1 egg, beaten
- 1 cup milk
- 2 tablespoons vegetable oil
Instructions:
- In a large bowl, combine your dry ingredients; flour, sugar, baking powder and salt.
- In a separate bowl combine the remaining egg, milk and oil.
- Create a well in the center of the dry ingredients. Pour the wet ingredients in the well of the dry ingredients.
- Stir until the batter is moist but still lumpy.
- Heat a lightly oiled griddle or frying pan over medium high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Flip the pancake when you observe air bubbles pop and form holes that stay open on the surface. Slide a thin spatula under your pancake, and quickly flip it over and allow it to cook for another minute or two.
- Serve hot.
