Vibrant Kale Salad

Serves: 4-6 as a side dish | Prep time: 20 mins

Ingredients:
1-2 bunches of curly kale
1 large avocado (soft)
1 cup golden raisins
2 large carrots, julienned (or grated)
½ red onion, finely diced
1 small bunch mint
½ cup toasted pumpkin seeds (optional)
2 large lemons (zest and juice)
2 TBSP White balsamic vinegar
2 tsp Dijon mustard
2 tsp honey
2 TBSP olive oil
Salt and Pepper to taste
Sugar/honey and any extra herbs/spices you like to taste (for dressing)
Optional: crumbled goat cheese or feta

Directions

1. Stir the juice and zest of your lemons, while balsamic vinegar, mustard, oil and
seasonings (salt, pepper, sugar). Taste and adjust seasonings if needed. Add fresh herbs such as thyme, oregano or tarragon if you’d like!
2. Wash and de-stem the kale by cutting along both sides of the thick, fibrous stem. Gather the kale and roughly chop into small pieces.
3. In a large bowl, combine the chopped kale and avocado. Massage the kale for 1-2
minutes until it becomes less rigid and deepens in color.
4. Add the carrots, red onions, golden raisins and dressing to the salad. Toss to coat and allow to stand for 15 minutes.
5. Top with pumpkin seeds and cheese, if desired. Enjoy!
The best thing about this salad is that it’s totally versatile – just remember to create your own balance with sweet – salty – tangy – bitter and an array of textures. Happy eating!
