  • 1 (18.25 ounce) package of lemon cake mix
  • ⅓ cup vegetable oil
  • 2 eggs
  • 1 teaspoon lemon extract
  • ⅓ cup confectioner’s sugar
  • 1 sheet of parchment paper
  • Orange slices (optional--for garnishing)
  • Mint leaves (optional--for garnishing)


  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a large bowl, pour in cake mix then stir in vegetable oil, eggs, and lemon extract until well blended.
  3. Scoop teaspoon-sized drops of dough into a bowl of confectioner’s sugar and roll until lightly coated.
  4. Lay the parchment paper on a cookie sheet.
  5. Place dough on parchment paper about 1 ½ - 2 inches apart.
  6. Bake for 6-9 minutes or until bottoms are lightly browned.
  7. Remove from oven and allow to cool for 2 minutes before serving.
  8. Garnish with orange slices and/or mint leaves for a pop of color (optional).
  9. Store in an airtight container at room temperature for up to one week.
