Blueberry Muffins

Serves: 12 (yeilds 1 dozen muffins)

Prep time: 15 minutes

Cooking time: 45 minutes

Ingredients: 

  • 8 TBSP unsalted butter
  • 2 large eggs
  • 1/2 cup milk
  • 3/4 cup sugar + 1 teaspoon
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries

Instructions: 

  1. Preheat oven to 375 F. 
  2. Whisk the melted and cooled butter, eggs and milk together. 
  3. In a separate bowl, whisk the flour, 3/4 cup sugar, baking powder and salt together. 
  4. Stir the wet ingredients into the dry ingredients until just combined, the mixture will be lumpy. Don't overmix!
  5. Fold in the blueberries. 
  6. Divide the batter among a lined muffin tin and sprinkel the tops with the remaining sugar. 
  7. Bake 25-30 minutes or until golden brown. 
  8. Enjoy warm or store in the fridge in an airtight container for up to one week.
