Blueberry Muffins
Serves: 12 (yeilds 1 dozen muffins)
Prep time: 15 minutes
Cooking time: 45 minutes
Ingredients:
- 8 TBSP unsalted butter
- 2 large eggs
- 1/2 cup milk
- 3/4 cup sugar + 1 teaspoon
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups fresh blueberries
Instructions:
- Preheat oven to 375 F.
- Whisk the melted and cooled butter, eggs and milk together.
- In a separate bowl, whisk the flour, 3/4 cup sugar, baking powder and salt together.
- Stir the wet ingredients into the dry ingredients until just combined, the mixture will be lumpy. Don't overmix!
- Fold in the blueberries.
- Divide the batter among a lined muffin tin and sprinkel the tops with the remaining sugar.
- Bake 25-30 minutes or until golden brown.
- Enjoy warm or store in the fridge in an airtight container for up to one week.
