Jaimie Davis is a Registered Dietitian and Associate Professor in the Department of Nutritional Sciences at UT-Austin. She has extensive expertise in nutrition physical activity, and body composition assessment in pediatric populations. Many of her studies among obese Hispanic youth have shown protective effects of diets low in sugar intake, specifically sugar sweetened beverages, and high in dietary fiber and fruits and vegetables against increased obesity and related metabolic diseases. Dr. Davis’s research also involves developing and testing school and community based gardening and cooking programs targeting obesity prevention and treatment for low-income minority populations.
Dr. Davis has written numerous papers examining the role that dietary intake, specifically added sugar and dietary fiber, plays on adiposity and metabolic profiles in overweight Latino children. She has also conducted numerous clinical randomized controlled trials to examine the effects of diet and physical activity interventions on adiposity and related metabolic disease risks. She has examined the effects of diet and physical activity behaviors on cancer biomarkers, such as circulated sex hormones, fat depots and inflammatory pathways. Dr. Davis has also explored how diet interacts with genes and how these interactions influence metabolic disease risk.
She is currently conducting and testing the effects of a school and community based garden, nutrition, and cooking interventions on reductions in obesity and metabolic disease risk in minority youth.

Dr. Davis's research focuses on designing and disseminating nutrition, physical activity, and behavioral interventions to reduce obesity and related metabolic disorders in overweight youth, primarily for low-income minority populations.
Below is a description of recent projects conducted at UT.
Sugar Brain: This NIH R21 was funded in April of 2014. The goal of this study is to examine and compare how pictures of sugar-sweetened beverages (SSB) and actual SSB receipt impacts brain reward pathways, food choice, subsequent food/beverage intake, and acute metabolic pathways in overweight Hispanic children (7-10 y), between frequent and naïve SSB consumers. It is a cross-sectional study of 50 overweight Hispanic children, half who are frequent SSB consumers (i.e., report ≥ 2 SSB per day; n=25) and half who are naïve drinkers (i.e., report ≤ 2 SSB per week; n=25). Subjects will undergo two functional MRI paradigms and a meal challenge test to assess affects of SSB exposure on neurological and metabolic outcomes
TX Sprouts: This is an NIH R01 study, will likely be funded spring of 2015. This is a one-year school based gardening, nutrition, and cooking intervention (called “TX Sprouts”) with over 2400 3rd-5th grade students to improve dietary intake and reduce obesity and related metabolic disorders in Hispanic youth and their families. Sixteen elementary schools across school districts in Austin will be cluster randomized into either the TX Sprouts intervention or Control (delayed intervention) and diet, obesity, and metabolic outcomes will be measured at baseline and one-year.
Freshmen Health Study: This is a cross-sectional study with 130 Hispanic college freshmen to examine the role of eating frequency (i.e., frequent vs. infrequent eating) on nutrient intake, physical activity, adiposity (specifically visceral and liver fat stores), metabolic parameters (i.e., glucose, insulin, lipids and gut peptides), and gut microbiome. The data acquired from this study will be used to submit for an NIH R01 feeding trial in the Spring of 2016.
Type 1 Diabetes Intervention Study: Currently, this is a pilot study, internally funded by UT-Austin Research office, to conduct focus groups with parents/caregivers and structured interviews with healthcare workers in charge of taking care of young type 1 diabetic children (birth-5 y) to determine barriers and strategies for improving blood glucose control. This preliminary data will be used to submit for an NIH DP3 grant to develop a centralized real-time monitoring interface that combines behavioral data (i.e., diet, exercise, sleep), insulin dosing, glucose levels, and emotional status, which communicates with parents/caregivers and healthcare professionals in real-time, and to test the effects on glucose control of the child and quality of life and emotional status of the child and parent. This grant will be submitted March of 2015.
