Supported by a Provost’s Teaching Fellowship, Cook ‘em is an online collection of student-produced videos designed to highlight food science and safety techniques through easy-to-understand recipes. Through hands-on kitchen chemistry and culinary research technique, you'll learn foolproof ways to create delicious food while understanding the science behind it.

Cook'em provides immersive education and seeks to meet the following objectives:

1) Provide a multifaceted educational experience for students in the Nutritional Sciences Department at The University of Texas at Austin to utilize their knowledge and creativity by producing multi-media instructional materials that are informative, easily accessible and engaging to their peers. Through this project, students learn and develop a wide range of skills to effectively communicate valuable and useful information about food science, food preparation and culinary nutrition.

2) Provide an academic resource through which viewers learn how to prepare new dishes, while also acquiring small “nuggets” of functional food science information in each video.

Cook ‘em is an ongoing project that provides current and future nutritional science students with opportunities to create new videos for the collection, ensuring an ever-growing variety of content that continually enriches this resource. Our vision is that Cook ‘em will expand viewers’ repertoire of self-prepared nutritious meals as well as convey an understanding of kitchen safety and food science principles. We hope that this project will have expand the viewers’ knowledge of cooking techniques as well as empower them to make healthy choices about the foods they eat throughout their lives.
